Coconut French Toast with Creamy Coconut Syrup

I fell in love “at first bite,” when I was served Coconut French Toast with Creamy Coconut Syrup at a Woman’s Conference recently. It seemed to me that the room suddenly became much quieter, except for oohs and ahhs. My friend said, “Oh, this is rich and soooo good!” I knew it was the perfect Valentine breakfast for my man.
Grab your griddle, (couldn’t get along without mine), a mixing bowl, and let’s get cooking. Start by whisking together the eggs, coconut milk, coconut extract, vanilla extract and salt. Place the shredded coconut on a plate. Dip both sides of the coated bread into the shredded coconut. Brush a little bit of egg mixture on top of the coconut to make it stick to the bread. Heat a large skillet or griddle to medium-high heat. Cook the slices of bread to golden brown on one side and then turn and cook the other side. Serve immediately.
Make the Creamy Coconut Syrup by bringing the butter and sugar to a boil in a 2 quart saucepan. Remove from heat and add buttermilk, coconut extract, and baking soda. Stir well, soda will foam up a little. Serve hot over Coconut French Toast and enjoy.

- ⅛ teaspoon salt
- 1 cup shredded, sweetened, coconut
- 8 slices of French bread, cut into 1" slices
- 1 cup syrup
- ½ cup butter
- ½ cup buttermilk
- ½ teaspoon coconut extract
- ½ teaspoon baking soda

My little brother is nuts about french toast but coconut not so much. Do you have any idea for me to replace the coconut for another ingredient?

Thanks! I would say you could substitute the coconut milk for regular milk and leave out the other flavorings. You might try to add some crushed nuts (I recommend almonds!) to the french toast for a similar crunch!

YUUUUMMM! My husband is obsessed with french toast. Whenever I make some, it”s always 2 parts. I make mine first without the cinnamon and his with cinnamon. I will print this recipe and try it out 🙂
That is so funny! My family loves french toast, too, and I end up sprinkling cinnamon and sugar on my kids right out of the pan per their preference. For my husband and I we just like it plain. I hope you try it out and that it fits the bill for both of you!
This recipe looks simple.I love coconut milk.I want to make it for my husband but he’s allergic to eggsI wonder how it’d be without them.Or are there any substitutes?
In most recipes you can use yogurt or applesauce mixed with the milk. I have never tried it for this recipe but I have tried it with other french toast recipes and it is pretty good! You may want to give it a try!
